Joan Milà Brut Nature

Unlike all the sparkling wines covered in the DO cava (artificial region that includes almost all of Catalonia wine and small “islands” where there is a producer: Requena, Valencia, Rioja, Navarra or Extremadura), our sparkling wine is produced in a certain region.

So we are talking about a wine with a second fermentation, a blend of xarel·lo with chardonnay. Xarel·lo from the oldest vineyards on the estate; between 60 and 80 years old.

Vinification Process: Primary fermentation of the two varieties separately at low temperature in stainless steel tanks to prevent loss of flavour. After completion of the alcoholic fermentation, they are filtered. Then, the blend of the two wines is decided, which varies depending on the vintage. Once the coupage of the two varieties has been determined, the tirage takes place. Preparation of the pied-de-cuve starter responsible for the secondary fermentation of the wine in each individual bottle (Traditional method). The tirage took place on 22/02/2010. (Indicated also on the label.) Aging:After the minimum period of 24 months aging, clarification of the bottles is carried out and then disgorgement, the date being indicated on the bottle. The bottles are labelled and boxed at the same time as disgorging the wine.

Ideal as an aperitif. Perfect accompaniment to all fish dishes and excellent with rice dishes. Especially recommended with quality ham, roasts, and a whole range of cheeses and cold cuts. It is thus a suitable choice for completing an entire meal, from appetizers to desserts.
